Locking tabs can be manufactured in a variety of stocked materials including:

Mild Steel
Stainless Steel - grades 316 or 304
Locking tabs can be coated as required, for added protection against rust.
AE supplies Locking Tabs in various thicknesses ranging from 0.55-1.50mm.
